Make simple syrup

Combine the granulated sugar and water in a small saucepan. Warm over medium heat, stirring frequently until the sugar dissolves and the mixture is clear (about 3–4 minutes). Remove from heat and allow to cool to room temperature (15–20 minutes).

Prepare mango

If not already done, peel and dice enough ripe mango to yield about 3 cups of flesh (roughly 2 large mangoes). For the smoothest texture, scoop fruit from the pit and avoid fibrous parts.

Blend puree

Place the mango flesh, cooled simple syrup, lime juice, salt, and optional corn syrup into a blender or food processor. Puree on high until perfectly smooth (about 1–2 minutes). Taste and adjust: add more lime for brightness, more sugar or corn syrup for sweetness/silky texture, or a pinch more salt to enhance flavor.

Chill mixture

Transfer the mango puree to a bowl, cover, and refrigerate until thoroughly chilled (at least 1 hour; better if 2 hours). Chilling improves texture when churning.

Churn or freeze

If you have an ice cream maker: churn the chilled mango mixture according to the manufacturer's instructions until it reaches a soft-sorbet consistency (about 20–25 minutes). If you do not have an ice cream maker: pour the mixture into a shallow metal or glass pan and freeze. Every 30 minutes, vigorously stir or scrape the mixture with a fork or whisk to break up ice crystals; repeat 4–6 times until smooth and scoopable (3–4 hours).

Harden (optional)

For firmer scoops, transfer churned sorbet to a lidded container and press a piece of plastic wrap directly onto the surface. Freeze for an additional 1–2 hours to firm up to scoopable consistency.

Assembly & Garnish

Scoop sorbet into cones

Remove sorbet from the freezer about 5 minutes before scooping if very firm. Using a warmed ice cream scoop or spoon (dip in hot water and shake off), place a generous scoop of mango sorbet into each cone, tapping gently to settle if needed.

Garnish

If using toasted coconut, press a small amount around the top edge of the sorbet or sprinkle over the top. Add a small mint leaf and a pinch of lime zest to each cone for color and brightness.

Serve

Serve immediately for a crisp cone. If preparing ahead, set cones upright in a cone holder and store in the freezer for up to 24 hours; cones may soften over longer storage.
