1. Harvesting
Carefully hand-harvest the Nebbiolo grapes from the estate vineyard in the Green Valley of Russian River Valley.
2. Crushing
Gently crush the harvested grapes to release the juice while preserving the skins for fermentation.
3. Fermentation
Transfer the crushed grapes to fermentation tanks and allow them to ferment at controlled temperatures for approximately 2-3 weeks.
4. Pressing
After fermentation, press the grapes to separate the liquid from the skins and seeds.
5. Aging
Age the wine in neutral oak barrels for 12-18 months to develop complexity and integrate flavors.
6. Bottling
Once aging is complete, bottle the wine and allow it to rest for a few more months before release.
