Prepare the Turkey

Season the turkey breast with salt, pepper, garlic powder, and cumin. Grill the turkey on medium heat for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before dicing.

Assemble the Sandwich

In a bowl, mix the diced turkey with the diced green chiles and pepper jack cheese. Spread olive oil on one side of each slice of sourdough bread.

Grill the Sandwich

Place two slices of sourdough bread, oiled side down, on a grill or skillet. Spoon the turkey mixture evenly onto the slices, then top with the remaining slices of bread, oiled side up. Grill for about 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.

Serve

Remove the sandwiches from the grill, cut in half, and serve warm.
