Prepare the Filling

In a skillet over medium heat, combine the corned beef and sauerkraut. Cook until heated through, about 5 minutes. Stir in the Thousand Island dressing and mix well. Set aside.

Make the Omelet

In a bowl, whisk together the eggs, salt, and black pepper until well combined. In the same skillet, pour in the egg mixture over medium heat. Let it cook undisturbed for about 2-3 minutes, or until the edges start to set.

Add the Filling

Once the edges are set, add the corned beef and sauerkraut mixture to one half of the omelet. Top with Swiss cheese.

Fold and Finish

Carefully fold the other half of the omelet over the filling. Cook for another 2-3 minutes, or until the cheese is melted and the eggs are fully cooked.

Serve

Slide the omelet onto a plate and serve with hash browns and toast on the side.
