Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

Cook the Pancetta

While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta (or guanciale) and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Sauce

In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combine Ingredients

Add the hot drained pasta to the skillet with the pancetta. Toss to combine. Remove from heat and quickly pour the egg and cheese mixture over the pasta, tossing rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve

Serve immediately with additional Parmesan cheese and black pepper on top.
