Sauté the Vegetables
In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
Add Garlic and Seasonings
Stir in the minced garlic, Cajun seasoning, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
Incorporate Tomatoes and Broth
Add the canned diced tomatoes, tomato paste, chicken broth, Worcestershire sauce, and bay leaves. Stir well to combine.
Simmer the Sauce
Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 20 minutes, stirring occasionally.
Cook the Shrimp
Add the shrimp to the sauce and cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
Finish and Serve
Remove the bay leaves. Stir in the chopped fresh parsley. Serve the Shrimp Creole over cooked rice.
