Prepare the Roux

In a large pot, heat olive oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, about 15-20 minutes.

Sauté Vegetables

Add the diced onion, green bell pepper, and celery to the roux, and cook until softened, about 5-7 minutes. Stir in the minced garlic.

Add Sausage and Tomatoes

Stir in the andouille sausage and canned diced tomatoes. Cook for another 5 minutes.

Simmer the Broth

Pour in the chicken broth, and add bay leaves, cayenne pepper, thyme, oregano, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes.

Add Seafood

Add the shrimp, crab meat, and okra to the pot. Cook for an additional 10 minutes, or until the shrimp is cooked through.

Serve

Remove bay leaves before serving. Serve hot over cooked rice and garnish with sliced green onions.
