Base Muesli

Prepare Dry Mix

Combine base ingredients

Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper. In a large bowl, combine 2 cups rolled oats, 1 cup roughly chopped mixed nuts, 1 cup shredded coconut, 1 tablespoon sunflower seeds and 1 tablespoon pumpkin seeds. Stir to evenly distribute.

Add spices and salt

Sprinkle 1/2 teaspoon ground cinnamon and 1/4 teaspoon fine sea salt over the dry mix and toss so the spice is evenly incorporated.

Make Sweet Binder

In a small saucepan over low heat (or in a microwave-safe bowl), combine 3 tablespoons honey, 2 tablespoons maple syrup and 1 tablespoon olive oil. Warm gently until the honey thins and the mixture is runny (about 1–2 minutes). Remove from heat and stir in 1 teaspoon vanilla extract.

Toast and Coat

Pour the warm honey-maple mixture over the oat-nut-coconut mixture. Stir thoroughly so oats and nuts are evenly coated. Spread the mixture in an even layer on the prepared baking sheet, pressing lightly with a spatula so clusters form.

Bake in the preheated oven for 15–20 minutes, stirring gently once halfway through (at ~10 minutes). For larger clusters, do not over-stir; press again after stirring. Watch carefully during the last 5 minutes so the coconut and nuts do not burn. The mixture should be golden and fragrant.

Remove from oven and let the muesli cool on the baking sheet for at least 20 minutes; it will crisp and form clusters as it cools.

Finish & Store

Once cooled, transfer the toasted mixture back to a large bowl and stir in 1/2 cup chopped dried apricots, 1/2 cup dried cranberries (or raisins), 1/4 cup golden raisins and optional 1/4 cup chopped dates or sultanas. Mix until evenly distributed.

Taste and adjust: if you prefer it sweeter, drizzle an additional teaspoon of maple syrup and toss. Allow any residual warmth to dissipate before storing.

Store cooled muesli in an airtight container at room temperature for up to 2 weeks, or freeze portions for longer storage.

Serve

To serve, portion about 1/2 cup of Vina Mues into a bowl, add 1/2 cup plain yogurt or kefir and top with fresh berries or 1/2 sliced banana. Add milk to loosen if desired. Adjust portions to taste.
