For the tea

Method

Brew the tea

1

Boil water with spices

Pour 2 cups of cold water into a small saucepan. Add the sliced ginger, crushed cardamom pod, and cinnamon stick if using. Bring to a gentle boil over medium-high heat.

2

Add tea

Once the water reaches a rolling boil, reduce heat slightly and add 2 tsp black tea leaves (or 1 tea bag). Stir once to submerge the leaves.

3

Simmer

Let the tea simmer for 2–4 minutes depending on desired strength (2 minutes for light, 4 minutes for strong). If using a tea bag, 2–3 minutes is usually enough.

Finish and serve

4

Add milk and sweeten

Turn heat off. Add 1/2 cup milk and 1 tsp sweetener (adjust to taste). Return to low heat for 30 seconds to warm the milk and meld flavors; avoid boiling once milk is added.

5

Strain and pour

Place a fine mesh strainer over a teacup or small teapot and strain the tea into it to remove leaves and spices.

6

Garnish and serve

Taste and adjust sweetness. Add a slice of lemon if desired (note: lemon curdles milk; omit lemon if using milk). Serve immediately.
