Prepare fruit
Rinse the fruit. If using larger fruit (peach, citrus), chop into small pieces; if using berries, leave whole.
Combine the fruit, 1 cup sugar, 1/2 cup water, and 1 tablespoon lemon juice in a small saucepan.
Bring mixture to a gentle simmer over medium-low heat, stirring so the sugar dissolves. Simmer 6–8 minutes, crushing fruit with the back of a spoon to release juices.
Remove from heat and let steep for 10 minutes to deepen flavor. If using spices or ginger, add them while simmering and steep with the fruit.
Strain the mixture through a fine-mesh sieve or cheesecloth into a clean container, pressing solids to extract syrup. Discard solids. Let syrup cool to room temperature, then refrigerate. Yields about 6–8 fl oz concentrate; concentrate keeps refrigerated for up to 10 days.
Assemble Soft Drink (per serving)
Chill all ingredients (carbonated water and syrup) ahead of time for best fizz and flavor.
Fill a tall glass with 1 cup of ice.
Measure and pour 1.5 fl oz of flavored syrup (store-bought soda syrup or 1.5 fl oz of the homemade fruit syrup) over the ice. If you prefer a milder drink, use 1 fl oz; for sweeter, up to 2 fl oz.
Add 1/2 fl oz fresh lemon juice to brighten the flavor (optional but recommended).
Slowly pour 8 fl oz carbonated water down the side of the glass to preserve bubbles and create a gentle mix. Leave a small headspace to avoid overflow.
Stir once gently with a long spoon 2–3 times to combine syrup and soda without flattening carbonation.
Taste and adjust: if too sweet, add a splash more carbonated water; if too tart, add up to 1/2 tsp sugar or 1/4 fl oz additional syrup.
Garnish with a lemon wheel, a sprig of mint, or a few whole berries as desired. Serve immediately while fizzy.
Herbal / Spice Infusions (optional steps)
To infuse syrup with herbs or spices, add mint leaves, sliced ginger, or a cinnamon stick to the saucepan during simmering. Remove solids when straining.
For a subtle herbal aroma without simmering, clap mint leaves between your palms to release oils and slap them onto the rim of the glass before dropping into the drink.
