Chill glass

Place a coupe or chilled rocks glass in the freezer or fill with ice and water to chill while you prepare the cocktail.

Citrus and egg prep

If using egg white, separate half an egg (about 0.5 unit). Juice a fresh lemon to measure 0.75 oz of juice. Have simple syrup measured and ready.

Build & Shake

Dry shake (if using egg white)

Into a cocktail shaker (without ice) add 2 oz gin, 0.75 oz elderflower liqueur, 0.25 oz dry vermouth, 0.75 oz fresh lemon juice, 0.25 oz simple syrup and 0.5 unit egg white. Dry shake vigorously for 15–20 seconds to emulsify and develop foam.

Wet shake

Add ice (about 1 cup) to the shaker and shake hard for 12–15 seconds until well chilled. If not using egg white, combine ingredients with ice and shake for 12–15 seconds.

Double strain

Discard the ice/water from the chilled glass. Double-strain the cocktail into the chilled coupe or a rocks glass over a large ice cube using a fine-mesh strainer to remove ice shards and any solids for a silky texture.

Finish & Garnish

Carefully add 2 dashes of angostura bitters on top of the foam (if egg white used). Using a toothpick or skewer, gently drag small lines or create a simple pattern if desired. Garnish with a lemon twist expressed over the drink and dropped in, and optionally float an edible elderflower or small edible flower for an aromatic floral note.

Serve

Serve immediately while cold. Advise guests this cocktail contains raw egg white if used.
