Combine the berries, 1 cup sugar, lemon juice, and lemon zest in a medium saucepan over medium heat.

Bring to a gentle simmer, stirring occasionally. If using frozen berries, allow a few extra minutes for them to release liquid and thaw.

In a small bowl, whisk the cornstarch with 2 tablespoons cold water until smooth to make a slurry.

When the berries are bubbling and releasing juice (about 6–8 minutes), stir in the cornstarch slurry and continue to cook for 1–2 minutes until the mixture thickens slightly.

Remove from heat and stir in 1 teaspoon vanilla extract. Taste and adjust sweetness with up to 1–2 tablespoons more sugar if desired. Let cool to warm (15–20 minutes) — the compote will thicken further as it cools.

Shortcake / Biscuit Base

In a large bowl, whisk together 2.5 cups flour, 2 teaspoons baking powder, 2 tablespoons sugar, and 3/4 teaspoon salt until evenly combined.

Add the cold cubed butter to the flour mixture. Using a pastry cutter, two knives, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces (about 6–8 short rubs).

In a separate small bowl, whisk together the buttermilk, beaten egg, and 1/2 teaspoon vanilla. Pour the wet ingredients into the dry and stir gently with a wooden spoon or spatula until just combined — do not overmix; dough will be shaggy and slightly sticky.

Turn the dough out onto a lightly floured surface. Gently pat it into a 1-inch thick rectangle. Fold the dough over itself once or twice (this creates light layers), then pat again to 1-inch thickness.

Use a 2.5- to 3-inch biscuit cutter to cut rounds (press straight down without twisting). Place rounds on the prepared baking sheet about 1 inch apart. Re-roll scraps once to cut additional biscuits.

Carefully slice each warm biscuit in half horizontally. Spoon 2–3 tablespoons of the warm (or room temperature) berry compote onto the bottom half of each biscuit.
