Method
Prepare Glass
If you like a salted rim, rub a grapefruit wedge around the edge of a rocks glass or coupe, then dip the rim into a small plate with coarse sea salt to lightly coat. Set the glass aside.
Fill the prepared glass with ice (large cube or crushed) and set aside to chill while you build the cocktail.
Build the Cocktail
Measure and combine
In a cocktail shaker, add 2 oz blanco tequila, 1.5 oz freshly squeezed grapefruit juice, 0.5 oz freshly squeezed lime juice, 0.5 oz agave syrup, and 0.5 oz Aperol.
Shake
Fill the shaker with ice, secure the lid, and shake vigorously for 12–15 seconds until well chilled and slightly diluted (shaker will feel very cold).
Strain
Double-strain (using a Hawthorne and a fine mesh strainer) into the prepared glass over fresh ice. If serving in a coupe, strain without ice into the chilled glass.
Finish & Serve
If you prefer a lighter, spritzed finish, gently top the cocktail with about 1 oz sparkling water and give a very gentle stir (1–2 rotations) to integrate.
Express the oils of a grapefruit twist over the drink by holding the twist over the surface and giving it a firm squeeze so the oil sprays onto the cocktail, then drop the twist or rest a grapefruit wheel on the rim as garnish.
Serve immediately. Recommend tasting and adjusting sweetness with an extra 0.25 oz agave if your grapefruit is particularly tart.
