Prepare and cook potatoes

Place peeled and cut potatoes into a large pot and cover with cold water by about 1 inch. Add 1 tablespoon coarse salt. Optionally add smashed garlic cloves to the water to infuse flavor. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are very tender and easily pierced with a fork, about 15–20 minutes depending on chunk size.

Warm dairy-free milk and butter

While potatoes are cooking, warm 1 cup unsweetened plant-based milk and 3 tablespoons dairy-free butter (or olive oil) in a small saucepan over low heat until the butter melts and the milk is warm but not boiling. Warming prevents cooling the potatoes and helps them absorb liquid more easily.

Drain and steam-dry

When potatoes are tender, drain them thoroughly in a colander. Return the drained potatoes to the hot pot and place the pot back on the stove over low heat for 1–2 minutes, shaking the pot occasionally, to evaporate excess moisture. This step yields fluffier mash.

Mash and season

Remove garlic cloves if used. Mash the potatoes using a potato masher or ricer until mostly smooth with small lumps if desired. Gradually add the warmed dairy-free milk and melted dairy-free butter (or oil), stirring and mashing to reach your preferred consistency. Taste and season with 1½ teaspoons salt, ½ teaspoon freshly ground black pepper, and 1/8 teaspoon grated nutmeg, if using. Adjust seasoning and liquid to taste.

Finish and serve

Transfer mashed potatoes to a serving bowl, dot with a little extra dairy-free butter or a drizzle of olive oil if desired, and sprinkle with 2 tablespoons chopped chives or parsley. Serve hot.
