Prepare the Tomato Sauce

In a blender, combine the tomatoes, onion, bell pepper, garlic, and ginger. Blend until smooth to create a tomato sauce.

Sauté the Aromatics

In a large pot, heat the vegetable oil over medium heat. Add the blended tomato sauce and cook for about 10-15 minutes until it thickens and the oil starts to separate from the sauce.

Cooking the Rice

Add Spices

Stir in thyme, bay leaves, curry powder, salt, black pepper, and red pepper flakes into the tomato sauce. Cook for an additional 5 minutes.

Incorporate Rice

Add the long-grain parboiled rice to the pot and stir well to coat the rice in the sauce.

Add Broth

Pour in the chicken or vegetable broth, and bring the mixture to a boil.

Cook Rice

Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20-25 minutes or until the rice is cooked and the liquid is absorbed.

Final Touches

Fluff and Serve

Remove the pot from heat. Let it sit covered for 5 minutes. Then, remove the bay leaves and fluff the rice with a fork. Serve warm, optionally garnished with diced carrots, peas, and your choice of protein.
