Strawberries
Select 24 large, ripe but firm strawberries with intact green stems. Avoid bruised or overripe fruit, which release moisture and can prevent chocolate from adhering properly.
Rinse strawberries gently under cool running water and pat completely dry with paper towels. To ensure thorough drying, let strawberries air-dry on a clean kitchen towel or rack for 30–60 minutes; chocolate will not adhere to wet fruit.
Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
Chocolate Coating
Prepare a double boiler (or microwave)
If using a double boiler: bring 2–3 cm of water to a gentle simmer in a saucepan. Place a heatproof bowl over the pan (bowl should not touch the water). If microwaving: use a microwave-safe bowl and heat in short bursts (see next step).
Place 340 g semisweet chocolate and 2 tbsp butter or coconut oil in the bowl. If using a double boiler, stir frequently until chocolate is smooth and fully melted. If using a microwave, heat at 50% power for 30 seconds, stir, then continue in 15-second intervals stirring between each until smooth to avoid burning.
Hold a dried strawberry by the stem and dip it into the melted chocolate, swirling to coat about two-thirds of the berry. Lift and allow excess chocolate to drip back into the bowl, then gently twist the strawberry as you pull it away to create a smooth finish.
Place the dipped strawberry stem-side up on the prepared parchment-lined baking sheet. Repeat with remaining strawberries. If you run out of space, work in batches and keep finished berries in a single layer so they do not touch.
Optional — sprinkle a light pinch of sea salt on a few dipped strawberries immediately after dipping for a sweet-salty contrast.
Chill the dipped strawberries in the refrigerator for 30–45 minutes, until the chocolate is set to the touch. For faster setting, place them on a single layer on the baking sheet and put them in the coldest part of the fridge, but avoid leaving them in the fridge for many hours as condensation can form when brought back to room temperature.
White Chocolate Drizzle (optional)
Place 85 g white chocolate and 1 tsp vegetable oil in a small microwave-safe bowl. Microwave at 50% power for 20–30 seconds, stir, then continue in 10–15 second bursts stirring between each until smooth. Alternatively, melt over a double boiler. The oil thins the white chocolate slightly to make a smoother drizzle; omit if not needed.
Transfer melted white chocolate to a small piping bag or a zip-top plastic bag and snip a tiny corner. Hold the bag about 6–8 inches above the strawberries and drizzle in a back-and-forth motion so thin lines form over the set dark chocolate. Alternatively, dip a fork into the white chocolate and flick it over the berries.
Allow the drizzle to set at room temperature (about 15–20 minutes) or refrigerate for 10–15 minutes until firm.
Finish & Storage
Once chocolate (and drizzle, if using) are fully set, transfer the strawberries to an airtight container lined with parchment paper, arranging berries in a single layer. If you must stack layers, separate layers with additional parchment to prevent sticking and breakage.
Store refrigerated for up to 48 hours for best texture and flavor. Bring to cool room temperature for 10–15 minutes before serving to allow the chocolate to lose chill and the strawberry flavor to be more pronounced.
Note about advance notice: prepare and dip strawberries on the day of service whenever possible. Because these require 1 day advance notice, plan to make them the evening before or early the morning of the event and keep refrigerated. Avoid preparing more than 24 hours ahead to prevent moisture buildup and loss of freshness.
