Sparkling Toast preparation

    Chill and prepare glassware

    Place the sparkling wine bottle in the refrigerator for at least 30 minutes prior to serving (or in an ice bucket for 10–15 minutes). If you want rimmed glasses, pour the 0.25 cup coarse sugar onto a small plate and wet the rim of each glass with the 2 tsp water; dip each rim into the sugar and set glasses aside to dry briefly. Place ice in an ice bucket for chilling the carafe or glasses if using.

    Make citrus syrup (if using honey, warm gently)

    In a small bowl or measuring cup combine 0.25 cup simple syrup (or warmed honey syrup) with 0.5 cup fresh lemon juice and 0.25 cup fresh orange juice (if using). Stir to combine. Taste and adjust sweetness: add more syrup if you prefer slightly sweeter toasts. If using orange liqueur, stir it into this citrus mixture now.

    Muddle mint (optional)

    Place the 8 fresh mint leaves into a small bowl or the bottom of a pitcher and gently bruise or muddle them with the back of a spoon (no need to pulverize) to release aroma. This step is optional but adds a fresh herbal note to the toast.

    Combine and chill

    In a large chilled pitcher or carafe, add the muddled mint, the citrus-syrup mixture, and a handful of ice (about 1 cup) if you want a well-chilled blend. Slowly pour in the bottle of chilled sparkling wine. Stir once gently with a long spoon to combine — avoid vigorous stirring to preserve effervescence.

    Taste and finish

    Taste one small spoonful and adjust: if it's too tart, add up to 1–2 tablespoons more simple syrup; if you added the optional liqueur and want less alcohol flavor, top up with a little more sparkling wine. Remove the muddled mint if you prefer a clearer drink (or leave it in for visual effect).

    Serve

    Pour the sparkling toast into prepared glasses (8 flutes or small wine glasses). Garnish each glass with a lemon twist or thin orange slice and a small mint leaf if desired. Serve immediately so the drink remains lively and bubbly.
