Prepare Chicken
Pat the chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound to an even thickness about 3/4 inch for even cooking. Season both sides with 1.5 teaspoons salt and 1 teaspoon black pepper, pressing gently to adhere.

Sear and Roast
Preheat oven to 400°F (200°C). Heat a large ovenproof skillet over medium-high heat and add 2 tablespoons olive oil. When oil is shimmering, place chicken skin-side down (if skin-on) and sear without moving for 4–5 minutes until skin is golden brown and releases easily. Flip breasts, add 2 tablespoons unsalted butter to the pan, tilt the pan and baste the breasts for 1 minute. Transfer the skillet to the preheated oven and roast until internal temperature reaches 160°F (71°C), about 8–12 minutes depending on thickness.

Rest Chicken
Remove chicken from oven and transfer to a cutting board. Tent loosely with foil and rest 6–8 minutes — carryover heat will bring internal temp to safe 165°F (74°C). Reserve pan juices for possible use in sauce if desired.

Reduce Aromatics
While chicken roasts, make the beurre blanc. In a small saucepan or sauté pan over medium heat, add the minced shallots and garlic with the 3 tablespoons dry white wine and 1 tablespoon white wine vinegar. Bring to a simmer and reduce gently until liquid is nearly evaporated and shallots are soft, about 3–5 minutes. Watch closely so garlic doesn’t burn.

Emulsify
Lower heat to low. Add 2 tablespoons heavy cream and stir to combine. Add the cold cubed butter a few pieces at a time, whisking or stirring constantly so each addition fully emulsifies before adding the next. Continue until all 6 tablespoons of butter are incorporated and the sauce is smooth and velvety. The sauce should be warm but not boiling — high heat will break the emulsion.

Finish the Sauce
Once emulsified, remove from heat and stir in 1 teaspoon lemon juice, 3/4 teaspoon salt and 1/4 teaspoon white or black pepper. Taste and adjust seasoning. If sauce is too thick, whisk in 1–2 teaspoons warm water or reserved pan juices to loosen. Stir in 1 tablespoon chopped chives if using. Keep the sauce warm (over very low heat or in a warm spot) until ready to serve; do not overheat.
To Serve

Slice chicken breasts on a bias into 1/4- to 1/2-inch slices. Arrange slices on warmed plates. Spoon the garlic & shallot beurre blanc over the chicken, drizzle any remaining warm pan juices sparingly for extra flavor if desired. Garnish with chopped parsley or microgreens and lemon wedges on the side. Serve immediately.
