Black Truffle Butter

Black Truffle Butter

    Combine Ingredients

    Place 4 tbsp softened unsalted butter in a small bowl. Add 1 tsp black truffle paste (or a few drops of truffle oil if using), 1 tsp finely chopped parsley, a pinch of fine sea salt, and a pinch of freshly ground black pepper.

    Use a fork to mash and thoroughly combine the butter and flavorings until smooth and evenly distributed, scraping down the sides of the bowl. Taste and adjust truffle intensity or salt in small increments.

    Shape and Chill (optional)

    Spoon the mixture onto plastic wrap, roll into a log about 3/4 inch in diameter, twist ends to seal, and refrigerate 30 minutes to firm. Alternatively serve at room temperature for immediate melting over steak or vegetables.

Blue Cheese Butter

    Place 4 tbsp softened unsalted butter in a small bowl. Add 2 tbsp crumbled blue cheese, 1 tsp heavy cream (optional, to loosen the texture), a pinch of freshly ground black pepper, and 1/4 tsp lemon zest if using.

    Mash and Taste

    Use a fork to mash the blue cheese into the butter until creamy with small blue cheese pockets remaining for texture. If mixture is too stiff, add the heavy cream teaspoon by teaspoon until you reach desired spreadable consistency. Adjust pepper and salt sparingly (blue cheese is already salty).

    Form into a log with plastic wrap and refrigerate 30 minutes to firm for slices, or serve immediately at room temperature to melt atop hot dishes.

Garlic Herb Butter
