Heat water

Measure 2 cups (about 475 ml) of fresh cold water. Bring to a near boil — for black teas like Earl Grey, water should reach 200–212°F (just under to a rolling boil). If using an electric kettle with temperature settings, set to ~205°F.

Warm teapot or cup

Pour the extra 1/4 cup of boiling water into your teapot or tea cup to warm it. Swirl for 10–15 seconds, then discard the rinse water. Warming preserves temperature during steeping.

Add tea

Place 2 teaspoons of Earl Grey loose leaf tea into an infuser, tea ball, or directly into the warmed teapot (adjust to 1 tsp for a more delicate cup or 2½ tsp for stronger).

Steep

Pour the freshly boiled water (200–212°F) over the tea leaves. Steep for 3–4 minutes. 3 minutes yields a lighter, more aromatic cup; 4 minutes yields a fuller-bodied brew but may become slightly more astringent. Avoid steeping longer than 5 minutes to prevent excessive bitterness.

Strain

Remove the infuser or strain the tea leaves immediately into a cup to stop extraction and maintain clean flavor.

Add sweetener: Stir in 1 teaspoon honey or sugar to taste while the tea is hot so it dissolves evenly.

Add milk: If you prefer milk, add about 1–2 tablespoons of warmed milk. Pour gently and taste — some prefer just a splash so the bergamot aroma remains prominent.

Add lemon: Alternatively, add one thin slice of lemon (do not combine milk and lemon). Drop the slice into the cup or squeeze a little juice; adjust to taste.
