Porridge

Method

Porridge

1

Combine liquids and oats

In a small saucepan, combine 1 cup milk, 1/2 cup water, 1 cup rolled oats, 1/4 tsp salt, and 1/2 tsp ground cinnamon. Stir to combine.

2

Cook porridge

Place saucepan over medium heat. Bring to a gentle simmer while stirring occasionally. Reduce heat to low and cook, stirring every 30 seconds, until thickened and creamy, about 6–8 minutes for rolled oats (adjust 3–4 minutes if using quick oats).

3

Finish porridge

When porridge reaches desired thickness, remove from heat and let sit 1 minute to thicken slightly. Taste and adjust salt or cinnamon as desired.

5-Berry Compote

4

Prepare berries

If using fresh berries, rinse and drain. Hull/quarter strawberries as needed. If using frozen berries, measure them frozen (no need to thaw).

5

Cook compote

In a small saucepan over medium heat, combine all five berries (total 1 1/4 cups), 1 tablespoon honey, 1/2 tablespoon lemon juice, and 2 tablespoons water. Stir to combine and bring to a gentle simmer.

6

Reduce and thicken

Simmer uncovered for 6–8 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly. For a chunkier compote, cook less; for smoother compote, mash gently with a spoon or potato masher and cook an extra 1–2 minutes.

7

Adjust sweetness

Taste and add up to 1 teaspoon more honey if you prefer sweeter compote. Remove from heat and let cool slightly — the compote will thicken as it cools.

Toppings & Assembly

8

Plate porridge

Spoon the cooked porridge into a serving bowl, spreading it into an even layer.

9

Add peanut butter

Warm 2 tablespoons peanut butter for 10–15 seconds in the microwave or thin slightly with 1 teaspoon hot water so it drizzles. Dollop or swirl the peanut butter over the porridge.

10

Top with compote

Spoon 3–4 tablespoons of the 5-berry compote over one side of the porridge (or distribute as you like).

11

Add seeds and honey

Sprinkle 2 tablespoons mixed seeds evenly over the bowl. Drizzle 1 tablespoon honey over the top.

12

Finish and serve

Dust with an extra 1/4 teaspoon ground cinnamon if desired. Serve warm immediately.
