    Prepare and toast crostini

    Preheat oven to 400°F (200°C). Arrange baguette slices in a single layer on a baking sheet. Brush both sides lightly with 2 tablespoons olive oil. Toast in the oven 6–8 minutes until golden and crisp, flipping once halfway. Remove and let cool on a rack.

    Crisp the chickpeas

    Lower oven to 375°F (190°C). Pat the rinsed chickpeas dry thoroughly with paper towels (this step is critical for crisping). Toss chickpeas with remaining 1 tablespoon olive oil, smoked paprika, ground cumin, garlic powder, 1/4 teaspoon salt, and black pepper in a bowl until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast 18–22 minutes, shaking pan or stirring every 6–8 minutes, until chickpeas are golden and crisp. Taste and add remaining salt if needed. Let cool slightly — they will crisp more as they cool.

    Make herbed yogurt spread

    In a medium bowl combine Greek yogurt, minced garlic, lemon juice, lemon zest, chopped parsley, chopped dill, honey (if using), and remaining 1/4 teaspoon salt. Stir until smooth and season to taste, adjusting lemon or honey as preferred. Chill briefly (5–10 minutes) if time allows to let flavors meld.

    Assemble crostini

    Spread about 1 tablespoon of herbed yogurt on each toasted baguette slice. Top each with 6–8 roasted chickpeas (adjust to preference). Sprinkle a pinch of crumbled feta on top of each crostini and finish with a few microgreens or a small sprig of parsley for color. If desired, drizzle a few drops of olive oil and a light dusting of smoked paprika for presentation.

    Serve

    Arrange crostini on a platter and serve immediately so the chickpeas remain crisp. Estimated yield: about 20 crostini. Leftover roasted chickpeas can be stored in an airtight container at room temperature for up to 2 days (they will lose some crispness).
