Prepare the Pork
Season the pork loin pieces with salt and black pepper on both sides.
Breading Setup
Set up a breading station with three dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
Bread the Pork
Dredge each pork loin in the flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs.
Fry the Pork
Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded pork for about 4-5 minutes on each side or until golden brown and cooked through.
Drain and Serve
Remove the pork katsu from the skillet and drain on paper towels. Slice into strips and serve with tonkatsu sauce and shredded cabbage.
