Preheat and prepare
Place a pizza stone or baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes. Lightly flour a work surface with the all-purpose flour.
If using refrigerated dough, let it come to room temperature 20–30 minutes before stretching. Stretch or roll dough to a 12-inch round on the floured surface, leaving a slightly thicker edge for the crust.

Make the sauce
In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add the minced garlic and sauté 20–30 seconds until fragrant but not browned.
Add the crushed tomatoes and tomato paste, stir to combine. Add dried oregano, dried basil, sugar, salt, and black pepper. Bring to a gentle simmer, reduce heat to low, and cook 8–10 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning. Remove from heat and let cool slightly.
If you prefer a smoother sauce, blend briefly with an immersion blender or in a small blender before spreading.
Assemble & Bake
Assemble the pizza
Transfer stretched dough to a well-floured pizza peel or an inverted baking sheet dusted with cornmeal or flour. Spoon about 1/2 to 3/4 cup of the prepared sauce onto the center of the dough. Using the back of the spoon, spread the sauce in a thin, even layer leaving a 1/2-inch to 1-inch border for the crust.
Evenly distribute the 2 cups of mozzarella over the sauce. Tear or fold the 6 slices of Italian ham into smaller pieces and arrange them evenly on top of the cheese. Scatter the 1 cup of chopped fresh pineapple over the pizza, spacing pieces so the pizza is balanced (avoid overloading to prevent sogginess). Sprinkle optional red pepper flakes if using.
Bake
Slide the pizza onto the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway through, until the crust is golden and the cheese is bubbling and slightly browned. Baking time will vary by oven and thickness of the dough.
Finish
Remove the pizza from the oven and let rest 2–3 minutes. Sprinkle chopped fresh parsley or basil over the top if desired. Slice into 8 slices and serve hot.
