Prepare dough & oven

Preheat

Place an oven rack in the lower-middle position and preheat oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating. Allow 30 minutes for the oven/stone to fully heat.

If using store-bought dough, remove from fridge 20–30 minutes before stretching so it relaxes. Lightly flour work surface.

Prepare prawns

In a small bowl combine lemon juice, minced garlic, 1 tbs olive oil, ½ tsp sea salt and ¼ tsp black pepper. Add the tiger prawns and toss to coat. Let marinate 10 minutes while you prepare other components (do not marinate longer than 20 minutes or the acid will begin to firm the prawns).

After marinating, pat prawns dry with paper towel. Heat a non-stick skillet over medium-high heat. Sear prawns 30–45 seconds per side until just pink and opaque (they will finish cooking in the oven). Remove from heat and set aside.

Assemble pizza

On a lightly floured surface stretch or roll the pizza dough into a 12-inch (30 cm) round. Transfer to a piece of parchment paper or a pizza peel dusted with semolina/cornmeal.

Spread ½ cup tomato sweet chilli sauce evenly over the dough, leaving a 1/2-inch (1 cm) border for the crust.

Scatter the thinly sliced red onion evenly over the sauce, followed by the roasted red pepper strips.

Distribute the seared tiger prawns evenly across the pizza.

Crumble the goat's cheese over the top in small spoonfuls so every slice will have some creaminess.

Sprinkle the lightly toasted, roughly chopped cashew nuts over the pizza. If using chili flakes, sprinkle them sparingly now.

Bake & finish

Slide the pizza (on parchment) onto the preheated stone or place on a baking sheet and bake in the hot oven for 8–12 minutes, until the crust is golden and crisp and goat's cheese is slightly warmed and starting to brown at the edges.

Remove pizza from oven. Drizzle 1 tsp extra virgin olive oil over the top, scatter chopped parsley, and finish with ¼ tsp sea salt and 1/8 tsp freshly ground black pepper. Let rest 2–3 minutes before slicing.

Slice into 6–8 pieces and serve immediately.
