The Meat Sweats Recipe

A heavy-hitting spread for serious appetites. Includes 1 lb smoked brisket, 1 lb pork ribs, 1 lb pulled pork, 1 lb pork belly burnt ends, two sausages (one of each), and three pint-size sides (16 oz each). Feeds ~5–7. No substitutions.

    Bring meats to serving temperature

    If meats are fully cooked and chilled: Preheat oven to 300°F (150°C). Wrap each meat component separately in foil with 2–4 tablespoons of reserved pan drippings or mop sauce to keep moist (brisket slices in one packet, ribs in another, pulled pork in another, pork belly burnt ends in another, sausages in foil). Place on a rimmed baking sheet and reheat in the oven for 25–35 minutes until internal temperature reaches 140–150°F and meats are steaming. If you have a smoker/grill, reheat over indirect heat at low temp (225–275°F) for about 30 minutes, basting with mop sauce once.

    Slice and finish brisket

    Remove brisket from foil and slice across the grain into 1/8–1/4" slices. Arrange on a warm platter and spoon 2–3 tablespoons of mop sauce or reserved drippings over the slices to keep them juicy. Sprinkle with a pinch of coarse salt and black pepper.

    Prepare ribs

    If ribs are whole, cut between bones to separate into individual ribs or 2–3 rib sections. If you'd like a glaze, brush ribs once with 2–3 tablespoons of bbq sauce during the last 10 minutes of reheating and return to heat to set the glaze.

    Pull pork finishing

    Fluff pulled pork with two forks in its foil packet and mix in 1/4–1/2 cup of bbq sauce (depending on desired sauciness) and 1 tablespoon apple cider vinegar. Return to heat for 5–10 minutes to meld flavors, then transfer to serving dish.

    Pork belly burnt ends glaze

    Toss pork belly burnt ends in a bowl with 2 tablespoons melted butter, 2 tablespoons bbq sauce, and 1 tablespoon honey. Spread on a small sheet pan and roast at 375°F (190°C) for 10–12 minutes to caramelize glaze and crisp edges.

    Sausages

    If sausages are pre-cooked/smoked, warm them in their foil packet or slice into 1/2" rounds and sear in a hot skillet with 1 teaspoon butter for 2–3 minutes per side to get a light crust. Keep warm.

Sauces & Finishes

    Make finishing sauce: In a small bowl combine bbq sauce (1 cup), yellow mustard (2 tbs), apple cider vinegar (2 tbs), melted butter (2 tbs), honey (1 tbs), salt (1 tsp) and pepper (1 tsp). Whisk until smooth. Taste and adjust—if you want tang, add more vinegar; for sweetness add more honey. Reserve 1/2 cup for drizzling on the platter and keep the rest available for guests.

Sides (three pint-size sides)

    Bring sides to serving temperature: If refrigerated, remove lids and reheat each 16 oz side as follows — macaroni & cheese: reheat in oven at 350°F (175°C) covered for 15–20 minutes until hot, or microwave in 2–3 minute increments stirring between until 165°F. Baked beans: reheat in sauce pot over medium-low stirring gently until simmering, about 8–10 minutes. Coleslaw: serve chilled directly from container. Transfer each side into its own 16-oz serving container or bowl for presentation.

    Optional finishing touches: Sprinkle mac & cheese with 2 tbs of toasted breadcrumbs or extra shredded cheese and bake 5 minutes for a golden top. Stir a tablespoon of bbq sauce into baked beans for a smoky note if desired.

Assembly & Serving

    Arrange meats on a large serving board or tray: place brisket slices on one side, pulled pork heaped in a small mound, ribs fanned out, pork belly burnt ends in a bowl or small pile, and sausages either whole or sliced. Drizzle reserved finishing sauce lightly over brisket and burnt ends; serve remaining sauce in a small bowl for guests.

    Place the three pint-size sides in separate bowls or keep in their 16-oz containers and arrange alongside the meats. Add pickles and buns/bread to the board. Garnish with chopped parsley and tuck toothpicks near ribs/sausage for easy picking.

    Serve immediately while hot. Provide extra napkins and plates — this is a heavy, hands-on spread meant for 5–7 people. Leftovers: refrigerate any unused meats in airtight containers within 2 hours.
