1. Mix Ingredients

In a large mixing bowl, combine 5 cups of cornmeal with 10 cups of water. Stir until the cornmeal is fully dissolved in the water.

2. Add Sugar

Gradually add 5 cups of sugar to the mixture, stirring continuously until the sugar is completely dissolved.

3. Cool the Mixture

Allow the mixture to cool to room temperature before adding the yeast. This is crucial to avoid killing the yeast.

4. Add Yeast

Once the mixture is at room temperature, sprinkle 2 tablespoons of yeast over the top. Stir gently to incorporate.

5. Transfer to Fermentation Vessel

Pour the mixture into a fermentation vessel, leaving some space at the top for bubbling. Seal the vessel with an airlock.

6. Ferment

Place the fermentation vessel in a warm, dark place and let it ferment for about 5 to 7 days. You should notice bubbling as the yeast works.
