Prepare cheese
Unwrap the block of feta and pat it dry with paper towels to remove excess moisture. Cut into rough 1-inch cubes so it blends evenly. If using a crumbly feta, press gently to remove loose crumbs; keep the cubes.
Soften cream cheese
If your cream cheese is refrigerated, microwave briefly (5–10 seconds) or let sit at room temperature until easily spreadable but not melted.
Blend base
Place the feta cubes and softened cream cheese into a food processor or a high-speed blender. Add the Greek yogurt, lemon juice, lemon zest, minced garlic, honey (or maple), and 1 tablespoon of olive oil.
Pulse and scrape
Pulse the mixture 6–8 times to break down the cheese, then run the processor continuously for 20–45 seconds. Scrape down the sides with a spatula and continue processing until the mixture becomes smooth and spreadable.
Adjust texture and seasoning
If the mixture is too thick, add up to 1 tablespoon of water or milk, 1 teaspoon at a time, and process until you reach a silky, pipeable consistency. Taste and season with black pepper and red pepper flakes; add a pinch more honey if the feta tastes too sharp. Do not add salt initially — feta is salty already; adjust only if needed.
Finish with olive oil and herbs
With the processor running on low, drizzle in the remaining 1 tablespoon olive oil to emulsify and give a glossy finish. Fold in the chopped fresh herbs by hand with a spatula (or pulse 1–2 times) so they remain visible.
Transfer and chill (optional)
Spoon the whipped feta into a serving bowl or squeeze into a piping bag for presentation. You can serve immediately at room temperature or cover and chill for 20–30 minutes to let flavors meld. If chilled, let sit 10 minutes at room temperature before serving for easiest spreading.
Garnish and serve
Drizzle the reserved olive oil over the top, sprinkle smoked paprika and a few extra red pepper flakes, and finish with a small pinch of chopped herbs. Serve with crusty bread, pita, crisp vegetables, crackers, or as part of a mezze board.
Make-ahead and storage
Store leftover whipped feta in an airtight container in the refrigerator for up to 5 days. Stir gently before serving; add a splash of olive oil or water if it firms up and needs loosening.
