Method

Prepare Glasses
Place 1/2 cup of ice into four serving glasses (about 2 cups total).
Mix Base
Divide the simple syrup evenly among the four glasses (1 tbs each if following quantities) and add the lemon and lime juice: 1/2 tablespoon lemon and 1/4 tablespoon lime per glass. If you prefer sweeter soda, add a little more simple syrup.
Add Soda Water
Slowly pour 1 cup of chilled soda water into each glass over the syrup and citrus. Stir gently once to combine without losing too much carbonation.
Iced Black Tea (makes 4 servings)
Steep Tea
Bring 4 cups of water to just below boiling (about 200°F / 93°C). Remove from heat and add the tea (4 tsp loose leaf or 4 tea bags). Steep for 3–5 minutes depending on desired strength (3 minutes for lighter, 5 for stronger).
Sweeten
Remove tea leaves or tea bags and while the tea is still warm, stir in the 6 tablespoons of simple syrup so it dissolves evenly. Taste and adjust sweetness if desired.
Cool and Chill
Let the tea cool at room temperature for 15–20 minutes, then transfer to the refrigerator to chill until cold (about 30–45 minutes). For faster cooling, pour tea into a shallow container and place in an ice bath, or add a few ice cubes and then top up later to avoid diluting.
Serve
Fill four glasses with 1 cup ice each. Divide the chilled tea among the glasses. Add 1/2 tablespoon fresh lemon juice to each glass, stir gently, and garnish with a lemon slice and a mint sprig if desired. Serve immediately.
