Method
Prepare Vegetables
Wash and cut
Wash all vegetables. Peel carrots and cut into 1/2-inch coins. Trim broccoli into bite-size florets. Halve baby potatoes (leave larger ones quartered so pieces are similar in size). Halve zucchini lengthwise and slice into 1/2-inch half-moons. Trim sugar snap peas. Core and cut red bell pepper into 1-inch strips.
Bring a medium pot of salted water to a boil. Add the halved baby potatoes and boil for 6–8 minutes until just tender when pierced with a fork, then drain and set aside.
Cooking
Roast or Sauté Option — Roasting (recommended)
Preheat the oven to 425°F (220°C). On a large rimmed baking sheet, toss the carrots, broccoli, zucchini, sugar snap peas, red bell pepper and parboiled potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Spread in a single layer without overcrowding. Roast for 18–22 minutes, stirring once halfway through, until vegetables are tender and edges are caramelized.
Sauté option (if you prefer stovetop)
Heat a large skillet over medium-high heat with 1 tablespoon olive oil. Add carrots and potatoes first and cook, stirring occasionally, for 6–8 minutes until they begin to brown. Add broccoli and red pepper and cook 4 minutes more. Add zucchini and sugar snap peas and continue to cook 3–4 minutes until all vegetables are tender-crisp and browned in spots.
During the last 2 minutes of cooking (both methods), push the vegetables into a single area of the pan or the baking sheet and add the remaining 1 tablespoon olive oil and the minced garlic, stirring quickly so the garlic becomes fragrant but not burnt.
Finish & Serve
Remove vegetables from the oven or skillet. If using, add 1 tablespoon unsalted butter and let it melt while tossing the vegetables to coat. Add the fresh thyme and rosemary, lemon zest and lemon juice, and taste; adjust salt and pepper as needed.
Transfer to a serving platter. Sprinkle with chopped parsley and toasted sliced almonds, if using. Serve hot as a side dish. Leftovers keep in the refrigerator for up to 3 days.
