Prepare glass
Chill a Collins or highball glass by filling with ice and setting aside while you mix the cocktail.
Measure 2 oz gin (or vodka) and 0.5 oz dry vermouth into a cocktail shaker.
Seasonal Fruit/Herb Component
If using whole fruit (berries, peach, pear, apple), make a small puree: roughly chop 2–3 pieces (about 1/3 cup), muddle briefly in a bowl or blender with a splash of water until smooth, then strain for a finer texture. If using juice (pear, apple, or stone fruit juice), use 1 oz strained juice.
In the shaker, add 1 oz of the prepared seasonal fruit puree or juice and 4 fresh herb leaves (basil, thyme, or small rosemary leaves). Gently clap the herb leaves between your palms to release oils, then add them to the shaker. Do not pulverize; a gentle muddle is enough.
Acid & Sweet
Add 0.5 oz fresh lemon juice and 0.5 oz simple syrup to the shaker to balance sweetness and brightness.
Add 2 dashes of bitters if you want additional aromatic complexity (optional).
Mix & Chill
Fill the shaker with ice (enough to three-quarters fill), cap, and shake vigorously for 10–15 seconds until well chilled and slightly diluted.
Discard the ice from the chilled glass and strain the mixture into the glass over fresh ice (large cube or standard cubes), using a fine strainer if you used puree to catch any solids.
Finishing & Sparkle
Top with 1.5 oz club soda for a lighter spritz or 1.5 oz seasonal sparkling wine for a festive version. Stir gently once to integrate, taking care not to flatten the bubbles.
Garnish with the reserved herb sprig and, if desired, a thin slice or wedge of the seasonal fruit used (e.g., peach slice, apple fan, or berry skewer). Serve immediately.
Notes & Variations
Seasonal fruit suggestions: Spring — strawberry-rhubarb puree with basil; Summer — peach or nectarine puree with thyme; Autumn — pear or apple juice with rosemary; Winter — blood orange or pomegranate with rosemary or thyme.
To make simple syrup: combine equal parts sugar and water, heat until sugar dissolves, cool. For a lighter sugar presence, use 1:2 syrup (1 part sugar to 2 parts water) and adjust quantity to taste.
For a lower-alcohol 'tap' version, use 1 oz spirit and 2 oz sparkling wine/club soda, or substitute spirit with 1.5 oz nonalcoholic gin alternative.
