Prep
Build the Cocktail
Fill the prepared highball or Collins glass three-quarters full with cubed ice (about 1 cup).
Add the reposado tequila (2 oz), fresh lime juice (0.5 oz), and simple syrup (0.25 oz) directly into the glass.
Gently stir the mixture once or twice with a bar spoon to combine the tequila, lime and syrup without over-diluting.
Top with Fever-Tree grapefruit soda (about 4 oz) poured slowly down the side of the glass to preserve carbonation.
Floater & Finish
Carefully pour Lyre's Italian Spritz (0.5 oz) over the back of a bar spoon held just above the drink surface so it floats as a fragrant, slightly bitter top layer.
Garnish with the grapefruit wedge or wheel on the rim. Optionally give the wedge a light squeeze over the drink before dropping it in for extra aroma and a touch more acidity.
Serve with a short straw and advise the drinker to sip through the top layers to experience the Lyre's float, then mix gently if they prefer a fully integrated palate.
