Method
Prepare & Build
Chill glass
Select a double old-fashioned glass or a tiki mug and fill it with ice to chill while you build the cocktail.
Combine base ingredients
In a cocktail shaker, add 1.5 oz Malibu Mango rum, 0.75 oz light rum, 0.5 oz dark rum, 2 oz pineapple juice, 1 oz orange juice, 0.5 oz orgeat, and 0.25 oz simple syrup.
Add ice and shake
Add a generous handful of ice to the shaker (enough to chill well), cap it, and shake vigorously for about 10–12 seconds until the outside of the shaker is frosty and well-chilled.
Assemble & Finish
Strain
Fine-strain or double-strain the shaken mixture over the fresh ice in the chilled glass to remove small shards of ice and any pulp.
Float black rum
Carefully pour 0.5 oz black (overproof) rum over the back of a bar spoon held just above the surface so the dark rum floats on top, creating a layered sunset effect.
Garnish & serve
Garnish with a lime wedge (squeezed or left on the rim), a pineapple wedge or wheel, and a sprig of fresh mint. Optionally slap the mint once to release aroma. Serve with a short straw and encourage guests to sip slowly so the floater gradually blends.
