Chill glass

Place a champagne flute or a coupe in the freezer for 10–15 minutes before serving, or fill with ice water for 3–5 minutes and discard ice water just before pouring.

If using a chilled flute: hold the glass by the stem. If using a stemless glass or rocks glass with ice, fill the glass with 1/2 cup ice and set aside.

Pour 1 cup of well-chilled non-alcoholic prosecco into the prepared glass slowly, tilting the glass at a 45° angle and then straightening as the glass fills to preserve bubbles.

If using an optional flavor variation, add the chosen ingredient first (see amounts in ingredients). For peach, gently spoon purée into the bottom of the glass before pouring the sparkling wine; for elderflower, stir 1 tablespoon into the glass before pouring; for raspberries, muddle 3 raspberries lightly in the base of the glass then pour prosecco over them.

Garnish with a lemon wheel or twist on the rim and, if desired, a sprig of fresh mint tucked into the glass.

Serve immediately to preserve effervescence.
