Selecting and serving fresh milk
Choose fresh whole milk from the refrigerator. Inspect the container for a clean smell and no off-odors. Shake gently if unhomogenized, then pour the desired amount (for this recipe, 4 cups) into a clean pitcher or glass. Serve cold directly from the refrigerator.
Heating / Steaming (optional)
Stovetop gentle warming
Pour up to 1 cup of milk into a small saucepan. Warm over low to medium-low heat, stirring or swirling frequently to prevent a skin forming or milk scorching. Heat until small wisps of steam appear and the milk reaches 140–150°F (60–65°C) for warm milk. Do not boil. Remove from heat and use immediately.
Steaming for coffee/cappuccino
If using an espresso machine steam wand, pour 1 cup of cold milk into a metal steaming pitcher. Insert the wand just below the surface and turn on to introduce air for the first 2–4 seconds if microfoam is desired, then submerge the tip to heat milk until the pitcher is slightly too hot to hold (~150–160°F / 65–71°C). Tap the pitcher on the counter once and swirl to integrate foam. Pour into espresso immediately.
