Prepare the infused ice globe (can be made 24+ hours ahead)
Make and infuse ice globe
Use a spherical ice mold sized for a cocktail glass. Boil and cool distilled water once (to reduce cloudiness) and pour into the mold. Add the orange peel strip and 1 tsp amarena cherry syrup into the cavity before freezing. Freeze at least 12 hours (preferably 24) until fully solid. Remove from mold just before service and pat dry.
If you don't have a sphere mold: freeze water in a small round bowl or large silicone mold to make a single large clear-ish cube. Add the orange peel and syrup similarly.
Build and Stir the Manhattan
Combine spirits and bitters
In a mixing glass, add 2 oz Jefferson's bourbon, 1 oz sweet vermouth, and 3 dashes orange bitters.
Stir 37 times
Add enough cold bar ice to the mixing glass to chill without watering excessively. Stir with a bar spoon for 37 revolutions (count clearly). Aim for smooth, even strokes around the mixing glass to achieve proper dilution and silky texture — roughly 20–30 seconds depending on temperature. The recipe specifically calls for 37 stirs; finish on that count.

If you want a brighter amarena presence, swirl 1 tsp amarena/Luxardo syrup in the chilled serving glass before dropping in the ice globe, or brush the sphere lightly with the syrup after placing it in the glass.
Express oil and garnish
Hold the orange peel over the glass and give it a quick twist to release the oils across the surface. Rub the peel around the rim if desired, then drop the peel into the drink or discard per preference. Spear 1 amarena cherry and rest it on a pick across the rim or drop it into the drink.
Serve immediately. The infused ice globe will slowly release a subtle orange and amarena note as it melts while preserving the drink's dilution rate and temperature.
