Jerk Marinade
Prepare ingredients
Trim root ends from scallions and roughly chop. Strip thyme leaves from stems. Peel garlic and ginger. If using Scotch bonnet/habanero, wear gloves and remove stem; for less heat remove seeds and ribs.
Blend marinade
Combine scallions, thyme leaves, garlic, ginger, Scotch bonnet (use half for medium heat), soy sauce, brown sugar, vinegar, olive oil, lime juice, ground allspice, cinnamon, nutmeg, black pepper and salt in a blender or food processor. Puree until a smooth, slightly coarse paste forms. Scrape down sides and blend 10–20 seconds more so flavors are fully combined.
Adjust seasoning
Taste a tiny smear on the back of a spoon and adjust salt, sugar or lime if needed. If marinade is too thick, add 1–2 teaspoons water to loosen.
Chicken
Prepare wings
Pat the wings dry with paper towels. If whole, separate at the joint into drumettes and flats if desired. Place wings in a large bowl or a resealable plastic bag.
Optional dry-crisp step
Toss wings with 1 tsp baking powder and 1/2 tsp salt (reduce from marinade salt if using). This helps crisp the skin when baked or air-fried. This is optional — skip if you prefer classic marinated texture.
Marinate
Pour the jerk marinade over the wings, massaging it into the meat so each piece is well coated. Cover and refrigerate for at least 4 hours, preferably overnight (8–12 hours) for best flavor penetration. If short on time, marinate for at least 30 minutes at room temperature.
Bring to temperature
Remove wings from fridge 30 minutes before cooking to let them come closer to room temperature for even cooking.
Cook & Finish
Oven method (recommended for 2 lbs)
Preheat oven to 425°F (220°C). Arrange marinated wings on a wire rack set over a rimmed baking sheet, skin side up, leaving space between pieces for air circulation. Reserve excess marinade. Bake 35–45 minutes, turning once halfway, until internal temperature reaches 165°F (74°C) and skin is browned and slightly charred at edges. In the last 5 minutes, brush with reserved marinade (if reserved raw marinade touched raw chicken, bring to a simmer for 1–2 minutes before using).
Grill method
Preheat grill to medium-high. Oil grates. Place wings over direct heat and grill 15–20 minutes, turning every 3–5 minutes so they cook evenly and char without burning. Move to indirect heat if charring too quickly. Brush occasionally with reserved marinade (heat it first if it contacted raw chicken).
Air-fryer method
Preheat air fryer to 400°F (200°C). Arrange wings in a single layer and cook 20–25 minutes, shaking basket every 5–7 minutes, until crisp and cooked through. Smaller batches may be needed.
Rest
Let wings rest 5 minutes after cooking to redistribute juices.
Garnish & serve
Transfer wings to a serving platter. Sprinkle with chopped scallions and cilantro if using. Serve with lime wedges on the side for squeezing. Enjoy hot.
