Marinate pork

In a medium bowl combine the jerk seasoning, minced garlic, lime juice, olive oil, brown sugar, salt and black pepper. Add the cubed pork and toss until evenly coated. Cover and refrigerate for at least 30 minutes, ideally 2–4 hours. If short on time, 30 minutes will still impart good flavor.

Cook pork

Heat a large skillet over medium-high heat. Add a thin film of oil if pan is dry. Add the marinated pork in a single layer (work in two batches if necessary) and sear 3–4 minutes per side until browned. Reduce heat to medium and cook another 4–6 minutes, stirring occasionally, until pork reaches 145°F (63°C) and is tender. Remove from heat and let rest 5 minutes, then shred or thinly slice the pork against the grain into bite-size pieces.

For the Quick Pickled Vegetables

While pork marinates/cooks, combine rice vinegar, water, sugar and salt in a small bowl and whisk to dissolve sugar. Add the thinly sliced red onion and julienned carrot. Let sit at room temperature for 10–15 minutes (or refrigerate up to 2 hours) to quick-pickle and mellow raw flavors. Drain liquid before assembling if excess remains.

For the Sandwich Assembly

Prepare rolls: Split ciabatta or focaccia rolls. Lightly spread mayonnaise on the bottom halves and scatter sliced scallions and cilantro over the mayo. Top with a generous portion of the shredded jerk pork, then place 2 slices of pepper jack cheese over the pork. Add a few pieces of the quick-pickled red onion and carrot on top of the cheese.

Close sandwiches and butter the outside faces of the top and bottom rolls with softened butter (about 1/2 tablespoon per side).

Grill panini: Heat a panini press or a heavy skillet over medium heat. If using a skillet, place a second heavy pan or a foil-wrapped brick on top of sandwiches to press. Grill sandwiches 3–5 minutes, flipping once if using skillet, until bread is golden and crisp and cheese is melted. If using a press, cook 3–4 minutes until nicely toasted.

Finish and serve: Remove sandwiches from heat and let rest 1 minute. Slice in half and serve immediately with any extra pickles or lime wedges on the side.
