Prepare and simmer

Combine the sliced fresh ginger, sugar, and water in a small saucepan. Bring to a gentle boil over medium heat, then reduce heat and simmer for 10–12 minutes, stirring occasionally so the sugar dissolves and the ginger releases its flavor.

Steep

Remove the pan from heat and let the ginger steep in the syrup for at least 30 minutes for a strong flavor (up to 2 hours for very concentrated syrup). If using, stir in the fresh lime juice and lemon zest after removing from the heat.

Strain and cool

Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing on the solids to extract as much liquid as possible. Discard solids. Let the syrup cool to room temperature, then refrigerate until cold. Syrup keeps in the refrigerator for up to 2 weeks.

Assembly

Fill a tall glass or pitcher with ice cubes. Pour 1/4 cup (60 ml) of chilled ginger syrup into the glass (adjust to taste; use 2–4 tablespoons for a single drink depending on desired sweetness and spice).

Top with 3/4 cup (180 ml) cold sparkling water or club soda for a single serving. Stir gently to combine. Taste and adjust: add more syrup for sweetness/heat, or more soda for a lighter drink.

Garnish with lime or lemon slices and a mint sprig if using. Serve immediately.

To make a pitcher: multiply syrup and soda proportionally (use about 1 cup syrup to 12 cups soda as a starting ratio) and mix in a pitcher with ice; taste and adjust.
