Prepare Fruit

Wash and dry

Rinse all berries, grapes, kiwi, apple, and mango under cool running water. Pat dry gently with paper towels or a clean kitchen towel to remove excess moisture (this helps prevent the salad from becoming watery).

Hull and slice strawberries

Remove strawberry stems and hulls. Slice larger strawberries into quarters, halved if medium-sized, and leave small berries whole so pieces are roughly bite-sized.

Halve grapes

Slice each grape in half lengthwise. This improves texture and helps dressing coat the fruit.

Dice pineapple and mango

Cut pineapple into bite-sized 3/4-inch (2 cm) cubes. Peel and dice the mango into similar-sized pieces, taking care to cut away from the large flat pit.

Peel and slice kiwi

Peel kiwi with a spoon or knife and slice into rounds or half-moons about 1/4 inch thick.

Dice apple

Core the apple and cut into 1/2-inch bite-sized cubes. Toss immediately with 1/2 tablespoon of the lime juice to prevent browning (reserve remaining lime juice for dressing).

Slice banana (just before serving)

Wait to slice the banana until just before tossing the salad to minimize browning. Slice into 1/4-inch rounds.

Combine dressing

In a small bowl, whisk together the remaining 1.5 tablespoons lime juice, 1 tablespoon honey, orange zest, a pinch of sea salt and a pinch of black pepper until honey dissolves and the mixture is uniform.

Toss fruit with dressing

Place all prepared fruits except the banana in a large mixing bowl. Pour the dressing over the fruit. Gently fold with a rubber spatula or large spoon 6–8 times until fruit is evenly coated. Add the banana slices and fold once more gently to avoid mashing.

Add mint and chill

Sprinkle the chiffonaded mint over the tossed fruit and fold gently to distribute. Cover the bowl and chill the salad in the refrigerator for 15–30 minutes to let flavors meld. (If serving immediately, let sit at room temperature for 5–10 minutes.)

Serve

Give the salad a final gentle stir, taste and adjust with an extra squeeze of lime or a drizzle of honey if desired. Serve chilled or at cool room temperature in a large bowl or divide into individual bowls.
