Prepare Glass & Garnish
Cut a thin wheel or twist from the grapefruit for garnish. Set aside in the refrigerator so it stays cold and firm.
Mix Soda
Fill the chilled glass with fresh ice cubes until nearly full (about 1 cup).
Pour in 0.25 cups (about 60 ml) of fresh pink grapefruit juice over the ice.
Add 0.5 tablespoon simple syrup and 0.5 teaspoon fresh lime juice to the glass. These balance acidity and mimic the gentle sweetness of Fever-Tree grapefruit soda.
If using grapefruit bitters, add 2 dashes now.
Top carefully with 1 cup (about 240 ml) of Fever-Tree Indian Tonic or a neutral sparkling water. Pour slowly over the back of a spoon or down the side of the glass to preserve carbonation and create a gentle layering effect. Stir once gently with a bar spoon (1–2 slow turns) to integrate.
Finish & Serve
Garnish by placing the grapefruit wheel on the rim or floating it on top. Add a mint sprig if using, gently slapping it between your palms first to release the aroma.
Serve immediately while cold and fizzy.
