Prepare glass
Select a highball or Collins glass. Fill it with large ice cubes or crushed ice to chill while you prepare the drink.
Muddle candied ginger
In a mixing glass or the serving glass (if you prefer), place the single piece of candied ginger. Lightly muddle 1–2 times to release intense ginger aroma — you want flavor, not completely pulverized bits. If you’d like more sweetness, add 0.25 oz candied ginger syrup and stir to combine.
Build the cocktail
Discard the initial ice from the serving glass if you chilled it, then fill glass with fresh ice. Add 2 oz Gosling's Black Seal Rum over the ice, followed by 0.5 oz fresh lime juice.
Top with ginger beer
Slowly pour 4 oz chilled ginger beer down the side of the glass so it layers and retains effervescence. Gently stir once — about 3 slow turns — to integrate rum, lime and ginger beer without losing too much carbonation.
Finish & garnish
Express the oils of a lime wedge over the top, drop the wedge or a wheel onto the rim as garnish. Spear a small piece of the muddled candied ginger on a cocktail pick and rest it on the rim or float it on top. Optionally add 2 dashes of Angostura bitters across the top to deepen aromatics.
Serve
Serve immediately while effervescent. Provide a straw or stirrer if desired.
