Prepare and preheat

Preheat oven to 220°C (425°F) if roasting, or heat a large non-stick skillet over medium heat if shallow frying. Line a baking sheet with parchment and place a wire rack on top if roasting. Pat cauliflower florets dry with paper towels so batter adheres.

Make the batter

In a large bowl whisk together flour (or GF blend), cornstarch, baking powder, garlic powder, smoked paprika, salt and black pepper. Gradually whisk in cold water until a smooth, slightly thick batter forms (consistency like heavy cream — adjust with up to 2 tbs more water or 1-2 tbs more flour to achieve).

Coat cauliflower

Working in batches, fully submerge each cauliflower piece in the batter, letting excess drip back into the bowl. Place coated florets on a plate or tray while you finish battering the rest.

Roast or shallow fry

For oven method: Arrange battered florets on the wire rack spaced so air circulates. Lightly brush or drizzle the oil over each piece. Roast 20–25 minutes, turning once halfway, until edges are golden and crisp. For stove method: Add 2–3 tbs neutral oil to the skillet and heat until shimmering. Fry coated florets in batches 3–4 minutes per side until deeply golden and crisp; transfer to a paper towel-lined plate to drain.

Finish

If you want extra crispness, after roasting you can broil for 1–2 minutes watching closely so they don’t burn. Keep cauliflower warm while preparing the bowls.

If using rice or quinoa: keep warm (2 cups cooked will serve 2–3). Fluff before plating. If using mixed greens: rinse and spin dry; dress lightly just before assembling the bowl if desired.

Prepare selected sides: shred cabbage, julienne carrots, cook and cool edamame, slice cucumber into ribbons, drain pickled onion, and char corn on a hot skillet or with a quick roast. Divide chosen sides into portions for each bowl (about 1/3–1/2 cup each depending on choice).

Sauce

Warm or bring your chosen sauce to serving temperature. If using sriracha mayo, whisk to combine before drizzling. For sweet chili glaze, gently warm to loosen. For tamari-ginger dressing, shake or whisk to emulsify.

Assemble Bowls

Divide the base among 2–3 bowls (recipe yields 2 generous bowls or 3 smaller). Arrange three sides around the base. Pile 6–8 crispy cauliflower florets on top of each bowl.

Drizzle 1–2 tbs of chosen sauce over the cauliflower and sides, or serve sauce on the side for dipping. Garnish each bowl with 1.5 tbs sliced green onion, 1 tsp toasted sesame seeds, and one lemon wedge.

Serve immediately while cauliflower is hot and crisp. Recommend: provide additional sauce on the side and a small bottle of lemon for squeezing to taste.
