Prep & Batter

Prepare cauliflower

Cut a medium head of cauliflower into medium bite-sized florets so you have about 1.5 cups. Pat florets dry with paper towel so batter adheres.

Make batter

In a medium bowl whisk together 0.75 cups gluten-free flour, 0.25 cups cornstarch, 0.5 tsp baking powder, 0.5 tsp garlic powder, 0.25 tsp smoked paprika, 0.75 tsp kosher salt and 0.25 tsp black pepper. Gradually whisk in 0.5 cups cold sparkling water until a slightly thick, smooth batter forms that coats the back of a spoon. If batter is too thick add 1–2 tbsp more water. Chill 5 minutes while preparing oil or oven.

Pan-fry (preferred for crispiness)

Heat 0.5 cups neutral oil in a large skillet over medium-high heat until shimmering (about 350°F / 175°C if using a thermometer). Working in batches to avoid crowding, dip each floret into the batter to coat completely, letting excess drip off, then place into hot oil. Fry, turning occasionally, until golden brown and crisp on all sides, about 4–6 minutes per batch. Transfer to a paper-towel-lined plate and lightly season with a pinch of salt. Repeat with remaining florets.

Oven-bake alternative (lower oil)

Preheat oven to 220°C / 425°F. Line a baking sheet with parchment and lightly oil it. Toss battered florets in a bowl with a light spray or drizzle of oil to coat. Arrange in a single layer and bake 20–25 minutes, flipping halfway, until edges are browned and crisp. For extra crispness broil 1–2 minutes at the end—watch closely.

Prepare Base & Sides

If not already cooked, steam or cook short-grain rice according to package directions (yields about 1 cup cooked). Steam broccoli and edamame until tender, about 4–6 minutes. Julienne or shred carrots and thinly slice cucumber. Toss mixed greens lightly with a splash of rice vinegar and oil or keep plain if preferred.

For quick pickled cucumber: combine 2 tbsp rice vinegar, 1 tsp sugar, pinch salt, and 2 tbsp water; stir until dissolved, then add sliced cucumber and let sit 10 minutes.

Sauce & Assembly

Warm your chosen sauce if desired. Suggested sauces: spicy sriracha mayo (3 tbsp mayo + 1 tbsp sriracha + 1 tsp lime juice), soy-ginger (2 tbsp tamari or gluten-free soy sauce + 1 tbsp rice vinegar + 1 tsp sesame oil + 1 tsp grated ginger + 1 tsp honey), or sweet chili (store-bought or 3 tbsp sweet chili sauce).

To assemble 2 bowls: divide 1 cup cooked rice (or mixed greens) between 2 bowls as the base. Arrange three sides around the base—suggestion: 0.5 cup shredded carrots, 0.5 cup steamed edamame, 0.5 cup pickled cucumber or steamed broccoli—distribute evenly.

Place 6–8 crispy cauliflower wings on top of each bowl (depending on size) or enough to heap generously over the sides. Drizzle or toss cauliflower with 2 tbsp of your chosen sauce, or serve sauce on the side for dipping.

Garnish each bowl with 1 tbsp thinly sliced green onion, 0.5 tsp toasted sesame seeds, a lemon wedge, and optional cilantro and a pinch of red pepper flakes. Serve immediately so cauliflower remains crisp.

Notes & Tips

All ingredient quantities are scaled for 2 servings. Adjust batter and frying time for larger batches. For gluten-free ensure all sauces (tamari, sweet chili) are labeled GF. For a lighter option, use the oven-bake method and brush with oil for crisping.
