Make simple syrup

Combine 2 cups water and 1 cup granulated sugar in a medium saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Add 2 tablespoons glucose syrup, stir to combine. Remove from heat.

Flavor and cool

Stir in 1 cup fresh yuzu juice, 1 teaspoon finely grated yuzu zest and 1 teaspoon fine sea salt into the warm syrup until homogeneous. Taste and adjust: if the sorbet will be too tart, add up to 1–2 tablespoons more sugar dissolved into the warm syrup. Let the mixture cool to room temperature (about 20–30 minutes), then chill in the refrigerator until cold (at least 2 hours or overnight). Stir in 1 teaspoon vodka just before churning (optional, improves texture).

Churn and freeze

Strain the chilled mixture through a fine-mesh sieve into the bowl of an ice cream maker. Churn according to manufacturer instructions until the sorbet reaches a soft-scoop consistency (usually 20–30 minutes). Transfer sorbet to an airtight container, smooth the top, press plastic wrap directly on the surface to minimize ice crystals, and freeze until firm, at least 3–4 hours (overnight preferred).

Exotic fruit salad (diced)

Prepare fruit: dice mango, papaya, pineapple and kiwi into uniform ~1/2-inch cubes. Place all diced fruit in a mixing bowl.

Dress fruit: add 2 tablespoons passion fruit pulp, 1 tablespoon fresh lime juice, 1 teaspoon honey or agave, a pinch of fine sea salt and 2 tablespoons torn/chiffonaded mint leaves to the bowl. Gently toss to combine, tasting and adjusting sweetness or acidity as needed. Let the fruit sit 10–15 minutes at cool room temperature (or chilled) to allow flavors to meld.

Optional prep note: if you prefer a firmer salad for plating, toss the fruit just before serving so juices don't make the sorbet watery.

To finish & serve

Portioning: scoop 2 generous scoops (about 1/2 cup each) of frozen yuzu sorbet into chilled bowls or coupe glasses.

Top with fruit: spoon about 1/3 to 1/2 cup of the diced exotic fruit salad alongside or on top of the sorbet. Drizzle any remaining dressing from the fruit bowl sparingly around the sorbet.

Garnish: sprinkle 1 teaspoon extra yuzu zest over the sorbet and fruit, add a mint sprig and optionally an edible flower or microgreens for visual lift.

Serving recommendation: serve immediately so the sorbet remains scoopable and the fruit stays fresh. Leftover sorbet can be stored in the freezer up to 2 weeks; fruit salad is best consumed within 24 hours refrigerated.
