Macerate strawberries

Hull and roughly chop 1 large or 2 small fresh strawberries. Place the chopped strawberries in a mixing glass or shaker and muddle gently until broken down but still slightly pulpy (about 10–15 seconds).

Add mint and lime

Add 6 fresh mint leaves and 0.5 oz fresh lime juice to the muddled strawberries. Gently muddle once or twice more to bruise the mint and release aroma — avoid over-muddling to prevent bitterness.

Mixing

Add 1 oz Seedlip Spice 94 and 0.5 oz fragola (strawberry liqueur) or strawberry syrup to the mixing glass along with 0.25 oz simple syrup if you prefer a sweeter drink.

Fill the mixing glass with ice and stir briskly (or, if using a shaker, cap and shake hard for 6–8 seconds) to chill and lightly dilute the mixture.

Finish & Serve

Strain the mixture (fine or julep strainer) into a highball or Collins glass filled with crushed ice or fresh ice cubes (about 1 cup). Use a fine strain if you want to remove seeds/ pulp for a smoother drink.

Top with about 3 oz ginger ale, pouring gently to keep carbonation. Give the drink one or two gentle stirs to combine without flattening the ginger ale.

Garnish with a fresh strawberry slice on the rim and a sprig of mint. Clap the mint between your palms once and tuck it into the drink to release aroma.
