Pre-serve preparation

Optional sugar rim

If using a sugar rim, rub a lime wedge around the glass lip, then dip the rim into demerara sugar placed on a small plate. Set glass aside to dry briefly.

If using egg white, do a dry shake step (see cocktail assembly) to build foam. Prepare fresh passion fruit by halving and scooping pulp; measure 1 oz.

Combine ingredients

In a cocktail shaker, add 1.5 oz amàrico rosso, 0.5 oz vanilla liqueur (or vanilla-infused vodka), 1 oz fresh passion fruit pulp, 0.5 oz fresh lime juice, 0.25 oz simple syrup, and 0.5 oz egg white (if using).

Dry shake

If using egg white, seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build a creamy foam.

Shake with ice

Add 4 large ice cubes to the shaker. Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

Strain

Double-strain the cocktail into the prepared chilled coupe or Nick & Nora glass (or a rocks glass over fresh ice if preferred) to remove seeds and ice shards.

Garnish and finish

Garnish with half a passion fruit floated on top or a spoonful of fresh pulp in the center of the foam. Serve immediately.
