Method

Build & mix

Chill glass

Place a highball or Collins glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to chill.

Fill a mixing glass or cocktail shaker halfway with ice.

Pour 1.5 oz Ketel One vodka and 0.5 oz Hajime liqueur over the ice.

Add 3 dashes of vanilla bitter to the mixing glass.

Stir gently for about 15–20 seconds to chill and dilute the spirit and liqueur mixture (do not shake — gentle stirring preserves clarity and integrates the bitters).

Assemble & finish

Discard the ice water from the chilled glass (if used) and add fresh ice to fill the glass about three-quarters full.

Strain the stirred spirit + liqueur mixture into the prepared glass over the fresh ice.

Top with 3 oz sparkling sake and 1 oz soda water. Pour gently so the sparkling sake retains effervescence; stir once very gently with a bar spoon to integrate (1–2 turns).

Express the oils of a lemon (or yuzu) twist over the drink by holding the twist skin-side down above the glass and giving it a sharp squeeze to release the oils, then rub the rim with the peel and drop it into the drink as garnish.

Serve immediately with a short straw or coaster.
