Harvest the Sangiovese grapes at optimal ripeness. Ensure they are free from disease and pests.

Harvesting

Destem the grapes and crush them gently to release the juice without breaking the seeds.

Crushing and Destemming

Add yeast to the crushed grapes and allow fermentation to begin. Maintain a temperature between 25-30°C (77-86°F) for optimal fermentation.

Fermentation

After fermentation, press the mixture to separate the liquid wine from the solids. Collect the free-run juice for quality.

Pressing

Transfer the wine into oak barrels for aging. Allow the wine to mature for at least 12 months to develop complex flavors.

Aging

Once the aging process is complete, add sulfur dioxide to stabilize the wine, then bottle it in clean, sterilized bottles.
