Method

Loaded Fries

  1. 1

    Prepare Fries

If using fresh potatoes: wash and cut potatoes into 1/3–1/2-inch thick fries. Soak cut potatoes in cold water 20–30 minutes to remove excess starch, then drain and pat dry thoroughly. If using frozen fries, skip soaking and pat dry if any surface frost.

  2. 2

Cook the fries: For frying—heat oil in a deep pot or fryer to 325°F (163°C) and blanch fries in batches 3–4 minutes until pale and tender but not browned; remove and drain. Increase oil to 375°F (190°C) and fry batches again 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. For oven method—toss fries with 1 tbsp oil, spread in a single layer on a baking sheet, bake at 425°F (220°C) 25–30 minutes, flipping once, until golden and crisp; season as above.

  3. 3

    Cook Meats

Slice the chicken breast and steak across the grain into thin strips (about 1/4-inch thick). Season both meats with 1/2 tsp kosher salt and 1/2 tsp smoked paprika. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add steak strips and cook 2–3 minutes per side until browned and cooked to desired doneness; remove to a plate and tent with foil. In the same skillet, add chicken strips and cook 3–4 minutes per side until cooked through and golden. Remove and keep warm. If skillet becomes dry, add a teaspoon of oil as needed.

  4. 4

    Sauté Onions & Mushrooms

In the same skillet over medium heat, add sliced onion and mushrooms. Sauté 4–6 minutes until softened and lightly caramelized, season with a pinch of salt and black pepper. Remove from heat.

  5. 5

    Warm Nacho Cheese

Warm the nacho cheese sauce in a small saucepan over low heat, stirring occasionally, until smooth and pourable (about 3–5 minutes). Alternatively, microwave in 20-second intervals, stirring between, until heated through.

  6. 6

    Assemble

Arrange cooked fries on a large oven-safe platter or individual plates. Evenly distribute the sliced steak and chicken over the fries. Spoon the warm nacho cheese over the top, then sprinkle shredded cheddar evenly. Scatter the sautéed onions and mushrooms over everything.

  7. 7

Finish & Garnish: Drizzle ranch dressing across the loaded fries (use the 1/4 cup to taste). Add hot sauce in a thin stream or dotted across to desired spice level. Sprinkle chopped parsley or cilantro for color and serve with lime wedges on the side if using.

  8. 8

Serve immediately while cheese is warm and fries are crisp. Leftovers can be refrigerated up to 2 days; reheat in a 400°F (205°C) oven for 8–10 minutes to restore crispness and warm toppings.
